Caesar Salad with Chickpeas
The Ceasar Salad is perhaps the most common and well-known salad today. Many people order it in a restaurant when they want a light or diet meal.
However, it often contains unnecessary fats and calories because of its distinctive dressing. If you are making the salad at home, we recommend making this Vegan variant. It tastes absolutely amazing and contains only a fraction of the calories of a regular Ceasar Salad. Instead of protein from chicken, we are going to be using chickpeas. Prepare and enjoy it for lunch or dinner.

Servings: 2-4
Ingredients:
2 cups cooked chickpeas 4 cups (around 500 g) lettuce, separated in leaves 1 tbsp olive oil 1 tbsp lemon juice ¼ cup vegan parmesan 1 tsp caper (optional)
Dressing ingredients:
1 cup raw cashews
1 tsp Dijon mustard
½ tsp salt
½ tsp black pepper
2 garlic cloves, mashed
6 tbsp lemon juice
3-4 tbsp olive oil
½ cup hot water
1 tsp miso paste
1 tsp agave syrup
Instructions:
1. Cook the chickpeas following the packaging instructions.
2. Mix all the dressing ingredients and blend until smooth.
3. Put the lettuce leaves in a large bowl, then cover them with olive oil and lemon juice. Then add the chickpeas, vegan parmesan, and the resulting dressing, and stir well. If desired, sprinkle a teaspoon of caper on top.
4. Serve and enjoy.
