Vegan Burrito Bowl

Everyone loves burritos, and there is no reason we can’t make them as healthy as they are delicious. We will mix brown rice, green peppers, black beans and a fantastic chimichurri sauce to get a vegan burrito bowl. I guarantee it will be your favourite lunch this week.

 

Preparation time: 60 minutes

 

Servings: 4

 

Brown rice ingredients:

1 cup brown rice

1 tbsp olive oil

1 green pepper, finely chopped

½ onion, finely chopped

1 jalapeno pepper, finely chopped

2 garlic cloves, minced

100 g pelati

1 cup sweet corn, cooked

¼ cup salsa sauce

1 tsp cumin powder

1 tsp oregano powder

salt and black pepper to taste

 

Black beans ingredients:

1 tbsp olive oil

¼ cup onion, finely chopped

¼ tsp cumin powder

¼ tsp sweet pepper

1 garlic clove, minced

¼ cup vegetable broth or water

1 ½ cup black beans

salt and black pepper to taste

 

Chimichurri sauce ingredients:

½ cup parsley leaves, finely chopped

½ cup fresh coriander, finely chopped

1 tbsp lemon juice

¼ tsp red chilli pepper flakes

2 garlic cloves, minced

2 tbsp olive oil

a pinch of salt

 

Decoration:

a few avocado slices

a bunch of parsley leaves

 

Brown rice instructions:

1. Cook the brown rice following the packaging instructions, and set it aside.

2. In a deep pan, add olive oil, pepper, onion, and jalapeno pepper, and simmer until the onion softens, around 3-5 minutes. Then add garlic and simmer for 1 minute.

3. Then, add pelati, cooked corn, salsa sauce, cumin, oregano, and cooked rice.

4. Simmer all together for about 7-9 minutes. Season with salt and black pepper.

5. Set aside the resulting mixture.

 

Black beans instructions:

1. Heat the olive oil for 1 minute in a deeper pan. Add onion and simmer for 3-5 minutes, or until the onion becomes transparent and softens.

2. Add cumin, sweet pepper, garlic, and simmer for 1 minute.

3. After that, add vegetable broth and black beans and leave to cook. After it boils, leave to cook for 30 minutes. Season with salt and black pepper to taste.

4. Set aside.

 

Chimichurri sauce instructions:

1. Put all the ingredients in a blender, and blend until smooth.

 

Dish instructions:

1. Spread the rice and beans evenly into serving bowls.

2. Coat them with chimichurri sauce, and add a slice of avocado and a few parsley leaves.

3. Serve and enjoy.
